What we eat

Mexican cuisine is rich and diverse, heavily influenced by regional variations and a blend of indigenous and Spanish culinary traditions. Central to Mexican food are staples such as corn (maize), beans, and squash, often accompanied by rice. These ingredients form the basis of many dishes, with corn tortillas being a common element across meals. Popular dishes include enchiladas, tamales, burritos, tacos, and quesadillas, which can be filled with a variety of meats, cheeses, and vegetables.

Mexican cuisine also features a wide array of spices and flavors, with chili peppers being a prominent ingredient used in sauces like mole, which is particularly popular in central and southern Mexico. Mole is a complex sauce made from dried chilies and other ingredients, often served with chicken or other meats.

Street food is an integral part of Mexican culinary culture, with tacos being one of the most popular items. Tacos can be filled with various meats, vegetables, and even insects like grasshoppers in certain regions. Other street foods include churros, which are sweet fritters often enjoyed with chocolate sauce.
